Smoothie, Of the Greenest Variety

We have been making green smoothies for the past six months or so, about three times a week. They have been a great solution for our veggie detesting little girl. After she consumes multiple servings of vitamin-rich spinach, I can kind of relax for the day. Of course we still offer her regular vegetables. And she is slowly getting there. But these little concoctions are quite great for our family. I drink a nice serving of green smoothie myself. And it's delicious. You should really try it.

Usually I put LOTS of spinach in the blender, followed by frozen blueberries and any other fruit I happen to have frozen. I add about a spoonful of orange juice concentrate and a half can of coconut milk (which is why we buy about three dozen when we happen upon a Trader Joes), and then water. Clara loves them. And repeatedly asks for "moonies".

This week I ran out of blueberries. So I made a spinach, pineapple, mango medley. It was heavenly. And ridiculously green. Blueberries must tame the greenness ;).
Yum. Delicious.

Oh my goodness...what a GREAT idea! My boys hate (understatement) veggies and I always feel awful that they don't eat it. I'll need to try these.

I love how green they are! I'll have to try your concoction with real spinach - I usually use a green magna powder that has lots of good green stuff for you in it.

Our kids love green smoothies too. We've been trying other liquids with the spinach: I usually do spinach, a can of dole pineapple chunks, OJ (or apple juice), blueberries if I have 'em, and an apple cut up. Obviously you already know mangos & bananas taste great in there too! But, if you don't have cocounut milk... apple juice works great with the juice from the can of the pineapple chunks. ;) Love you & can't wait to see you guys today!!

our family calls them "frog smoothies". they are super picky and that is how i got them to try it one day while they were watching princess and the frog. they wanted to drink it and become a frog! anyway, we love them and just had one this afternoon. the coconut milk sounds very yummy! I am going to go to trader joes asap and get some.

oh and thanks for the comment about welles' hair. it took a good 2 years to get to that point! you are almost there!
